Liguria, Tuscany and Umbria are arguably the most emblematic regions for olive oil production in the North of Italy, with a reputation for quality dating back to ancient times.

Due to the climate and hilly landscape, the olive oils from the North of Italy are more fluid, delicate and herbaceous than their southern counterparts. We have curated three olive oils that best represent these regions and their traditional cultivars:

A mastered blend of Moraiolo, Frantoio, Leccino and Americano olive varieties. Medium green fruitiness with herbaceous and artichoke notes. Guadagnòlo is old Italian referring to a large recipient that was used in past centuries to store milling tools.

Made with 100% Taggiasca olives harvested while green, Extremum is a delicate fruitiness oil balanced with slight bitterness and spice. It has predominant aromas of apple and almond accompanied by floral and herbaceous notes. The oil is great with leafy green salads, and exquisite when dressing fish or white meat.

Elegant and fluid, Stoica’s Monocultivar Leccino is a versatile EVOO for every day dishes. This year it has slightly stronger almond aromas and bitterness due to the very dry weather conditions in the summer months, that typically favor high polyphenols.
